Egg bake with bacon and veggies

You’ll need:

9 by 13 inch pan

10 eggs

1/2 cup milk

2 stalks green onion chopped

1/2 package chopped mushrooms

1/2 green pepper chopped

1 1/2 cup cheddar cheese grated

1 package bacon chopped

Fresh chives chopped

2-3 tbsp butter

Salt/pepper

Chop all veggies and sauté in butter until onions are translucent and mushrooms browned about 4 minutes. (Don’t sauté chives chop and set aside). In pan pour veggie mixture. In a separate bowl crack eggs and pour milk and mix until fluffy. Add salt and pepper and pour over veggie mix in pan. Layer with cheese. Cook chopped bacon for about 4 minutes so they are not all the way cooked and cover cheese with bacon. Put into preheated oven at 375 degrees for 30-40 minutes until eggs are cooked through and top is golden brown. Sprinkle chives on top and cut and serve. I usually add hot sauce or salsa for an extra kick! Enjoy ?
