We had a crazy busy Saturday and didn’t get home till 8:30 PM and I had chicken I had to use that in the fridge I threw this together and wow packed full of flavor and done in 30 minutes.
First you will need……..
3 big chicken breast cut in half
Olive oil each side of chicken breast
salt-and-pepper
oregano and basil
(About 2 tblsp of oregano and basil cover each side generously)
add olive oil to cast-iron skillet and seer each side of chicken
add 1 medium diced White onion
2 stalks celery choppped small
2 large garlic cloves sliced
sauté until tender
Add 6 tblsp lemon juice
1 package cherry tomatoes
1 cup vegetable broth
Bake in oven for 20 minutes @425
Remove and add 1 cup heavy whipping cream and one cup mozzarella cheese (bring to a boil on stove top, once boiling remove from heat and simmer)
Boil linguini noodles until tender and drain add butter or olive oil, garlic salt and parsley flakes for flavor.
Put noodles on plate top with creamy cheese sauce and add sliced chicken, top with fresh basil leaf and enjoy!
