When your in for a few rainy days…. you snuggle up and make soup!
My take on French onion soup.
Sauté 1 sliced white onion ( I added mushrooms ? also) 2 tblsp of butter
Add fresh thyme 6 springs and whershisher sauce (two splashes)
Then add two cans of beef consommé and bring to a boil.
Place soup into oven safe cup and add croutons a handful of mozzarella cheese and top with two slices of Swiss cheese
Put into oven on broil until cheese is bubbly and melted. Enjoy ?
